Usher in the New Year with Verace Truffle Products

Yay! Chinese New Year is round the corner!

Are you someone who plans out a feast other than the reunion dinner? For me, I like to prepare special dishes through the first few days of CNY :)

So I got to know of this boutique food company - Verace - sometime last year's Christmas. Verace (pronounced "Ver-rah-chey") is a food company that provide unadulterated food without harmful artificial and chemical additives. They specialise in truffle products, as well as sauces and creams, condiments and pasta in its range of products.

Truffles have long been prized for its rarity and its unique aromatic fragrance in preparing food. French Gourmand, Jean Anthelme Brillat-Savarin, don't call truffles "the diamond of the kitchen" and the king of all fungi, for nothing! :)

The best truffle grow on high altitudes only near the roots of oak trees and takes at least five to ten years to mature.

It's also good to know that Verace's truffle products do not contain any petrochemical that mimics the aroma of truffles, which is commonly used in the industry to flavour truffle products!

Dolly, from Verace, sent me an email earlier this year, introducing the use of truffle in Asian dishes. Now, that's quite interesting for me :p

So for this Chinese New Year, consider whipping up a great "fusion" meal!

Truffle Fried Rice (Serves 2)
- 1 cup mushrooms, chopped
- 1.5 cups cooked rice (preferably overnight)
- Cooking oil
- Sesame oil
- 1 egg
- Chopped garlic & shallot
- Spring onion
- Verace Black Truffle Oil
- 1/2 tsp Verace Black Minced Truffle
- Verace Black Truffle Carpaccio (optional)

1.  In a pan, heat some oil. Add chopped garlic and shallot.
2.  Add mushrooms.
3.  Saute until slightly browned.
4.  Add rice and egg. Stir with chopsticks until eggs are cooked through.
5.  Remove the rice from pan. Stir in Verace Black Minced Truffle and a few slices of Verace Black Truffle Carpaccio (optional).
6.  Drizzle some Verace Truffle Oil.
7.  Serve hot with some spring onion.

Prawns with White Truffle Honey (Serves 4)
-10 prawns
- Verace White Truffle Honey
- Minced garlic (about 2 cloves)
- Minced shallot (about 2-3 cloves)
- Minced ginger
- Black pepper & salt to taste
- Fish sauce
- Shaoxing wine or cooking white wine
- Sesame oil
- 1 egg
- Bread crumbs

1.  Marinate the prawns with sesame oil, fish sauce, salt, pepper, minced garlic and ginger for about 30 mins.
2.  Dip the marinated prawns into the egg and coat with bread crumbs. Fry until 3/4 cooked.
3.  Heat up balanced minced garlic and shallot in frying pan with some oil, over low heat.
4.  Add wine and truffle honey, off heat. Stir in fried prawns quickly.
5.  Serve immediately.
